Chilli Tomato Beef with Eggplant

INGREDIENTS
1 kg (2.2 lb) beef cubes
2 tbsp of oil
2 tsp melted butter
1 tsp WORLDFOODS Thai Red Curry Paste
1 eggplant (aubergine), cut into strips
2 tsp tomato paste
2 tsp sugar
1 bottle WORLDFOODS Chinese Chilli Tomato BBQ Marinade
PREPARATION
Marinate beef with WORLDFOODS Chinese Chilli Tomato BBQ Marinade for approximately 2 hours in the refrigerator.
Brush baking tray with melted butter, place the beef in hot oven and roast at 220
°
C (428
°
F) for 5-7 minutes.
Heat oil and saute the eggplant (aubergine). Add in sugar, tomato paste and red curry paste.
Cook over low heat until the eggplant is soften but still retains its shape.
Serve beef cubes on a plate and top with eggplant strips.
Serve hot with steam rice.
