Grilled Squid Salad

THE RECIPE

Ingredients:
300g (10.7oz) squid, cleaned and cut into 1 1/2 inch rings
2 tbsp olive oil
2 tbsp light soy sauce
2 cups mixed fresh greens
1 cup cherry tomatoes, halved
1 red/green capsicum, sliced
Spicy Mayonnaise: 1 tbsp thai chilli sauce and 1 cup of mayonnaise

Preparations:
Heat grill to high.
Toss squid with olive oil and light soy sauce.
Lower heat to medium, grill the squid for about 1 to 1 1/2 minutes on each side until it turns opaque. Remove onto a plate.
Arrange mixed salad greens, cherry tomatoes and capsicum slices onto plates. Top with grilled squid.
Drizzle a little of the spicy mayo over each plate. Serve immediately.

ULTRA SIMPLIFIED

Ingredients:
300g (10.7oz) squid, cleaned and cut into 1" rings
2 tbsp olive oil
2 tbsp light soy sauce
2 cups mixed fresh greens
1 cup cherry tomatoes, halved
1 red/green capsicum, sliced

Preparations:
Heat grill to high.
Toss squid with olive oil and light soy sauce.
