- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla essence

- Beat the sugar and eggs for approximately 5 minutes until pale and frothy.
- Add in coconut milk and vanilla essence.
- Pour into a metal tray and freeze for 3-4 hours until form or churn in an ice -cream maker according to the manufacturer's instructions.
- Serve scoops garnished with slices of fresh peach.
