INGREDIENTS
4 cups arugula
1 cup cherry tomatoes, halved
1/2 cup pine nuts
1/2 cup grated Parmesan cheese
Lime Mayo: 1 tbsp lime juice and 1/2 cup mayonnaise
PREPARATION
Toast the pine nuts on a pan over low heat, stirring constantly until slightly browned.
In a large bowl, mix together arugula, cherry tomates and toasted pine nuts.
Add lime mayo and toss salad.
Sprinkle over with grated Parmesan cheese.
