INGREDIENTS
4-5 tablespoons WORLDFOODS THAI PANANG CURRY PASTE
2 eggs
3 tablespoons cooking oil
150g chinese sausage, cut into strips
300g (10.7oz) cooked rice (cooked as per pack instructions)
100g mixed vegetables
PREPARATION
Make an omelette with 2 eggs. Cool and shred it thinly.
Heat 3 tablespoons cooking oil in a wok or frying pan.
Add the WORLDFOODS THAI PANANG CURRY PASTE and stir-fry until aromatic.
Throw in chinese sausage and fry for approximately 3 minutes.
Add in mixed vegetable and stir for a further minute.
Stir in rice and mix well. Cook for a further 3-4 minutes or until heated through.
Serve hot. Garnish with shredded omellete.
