Marinate chicken with WORLDFOODS Malaysian Chilli Coconut Marinade & Stir-fry for at least 3 hours or overnight.
If you don’t have roasting rack, place chicken in the tray covered with onions as a base. Tie both chicken legs up with a kitchen twine. Brush the chicken skin with some oil. Keep the marinade sauce for basting.
Roast chicken for about 1 hour 15 minutes in the preheated oven at 180 C.
When half way cooking, baste the whole chicken with the marinade sauce.
When internal temperature reaches 75 C (or check when a knife is inserted in the thigh area and the juice comes out clean), that means it’s done!
