    INGREDIENTS

  • 1 cucumber, thinly sliced
  • 50g (1.7oz)-80g (2.8oz)snowpeas
  • 1-2 tsp sesame oil
  • 2 tsp black sesame seeds
  • 1 tbp lime juice
  • 200g (7.1oz) chicken breast
  • Vinaigrette salad dressing

    PREPARATION

  1. Preheat oven to 180°C (356°F).
  2. Marinate chicken with sesame oil and lime juice. Cover with foil and bake in the oven for 20-30 minutes. Remove chicken and allow to cool.
  3. Once cooled, shred the chicken.
  4. Mix shredded chicken with the vegetables and toss with the vinaigrette salad dressing.
  5. Before serving, sprinkle with sesame seeds.
