200 grams of Spanish mackerel meat, cut into 5cm cubes
3 tablespoons of peanuts
2 potatoes
1 bottle of WORLDFOODS Massaman Curry Sauce
Salt and pepper to season
1-2 tablespoons of cooking oil
1 tablespoon of coconut cream
PREPARATION
Season the mackerel with salt and pepper
In a frying pan, heat up the cooking oil and brown the mackerel and remove while the inside is still rare
In a pot, pour in the entire bottle of the WORLDFOODS Massaman Curry Sauce and allow it to boil
Once it is boiling, add in the potatoes and reduce the heat. Allow to simmer long enough until potatoes are soft enough that if you were to pierce them with a fork, they would slide off the fork
Add the mackerel and peanuts and cook for 3 minutes
Place curry into a bowl and drip coconut cream on top to make it look prettier and creamier.
