INGREDIENTS
2 tablespoon WORLDFOODS THAI RED CURRY PASTE
150g (5.3oz) okra, sliced diagonally
100g (3.5oz) aubergine, cut into 2 inches long strips
1 medium onion, sliced
1 tablespoon tomato paste/puree
100ml (3.3 fl.oz) water
1 tablespoon oil
PREPARATION
Medium heat
Heat a large frying pan and pan-fry aubergine for 2-3 minutes until cooked. Remove onto a plate.
Heat oil and brown onions. Add okra and stir-fry for 2 minutes.
Add curry paste, tomato paste and water and cook till okra is tender.
Just before serving, throw in aubergine and stir till heated through.
Serve with rice or as a side dish.
*Suitable for Vegetarians & Vegans
