  • 1½ tbsp oil
  • 150g (5.3oz) minced pork/chicken
  • 1 small red capsicum, finely chopped
  • 50g (1.7oz) bean sprouts
  • 1 medium tomato, chopped
  • 4 large eggs, beaten

  1. Heat 1 tbsp oil in a frying pan. Add minced pork and stir fry for 2-3 minutes. Add stir fry sauce, capsicum, bean sprouts and tomato and stir fry for 3-4 minutes or until the ingredients are cooked. Remove from pan and set aside.
  2. Heat ½ tbsp oil over medium-high heat, pour in eggs and cook until both sides are set.
  3. Place the pork mixture in the middle of omelette. Fold and serve.
