    INGREDIENTS

Sambal Aiaoli :
  • 4 tbsp WORLDFOODS Indonesian Sambal Oelek
  • ½ cup mayonnaise
  • Juice from ½ lime
  • 3 spring scallion, minced
  Tuna Tataki-style
  • 1 lb. ahi tuna
  • ½ tsp cracked peppercorn
  • ½ tsp cummin seed, crushed
  • ½ tsp roasted white sesame seed
  • ½ tsp roasted black sesame seed
  • Pinch sea salt
  • 1 tbsp. olive oil

    PREPARATION

  1. In a non reactive bowl, add the WORLDFOODS Professional Indonesian Sambal Oelek, mayonnaise, lime juice and minced scallion. Mix well with a rubber spatula by folding all the components. Refrigerate.
  2. Cut the fresh ahi tuna into thin loins. Marinate them with cracked peppercorn, sea salt and olive oil. In high heat, seat the tuna loins to a rare consistency. Remove.
  3. Cut seared tuna into cubes and place a dollop of sambal mayonnaise on top of protein. Serve as appetizer.
