    INGREDIENTS

  • 500g boneless & skinless white fish, cubed
  • 4-5 pcs of banana leaf, 20 X 20cm, blanched in hot water.
Marinade paste:
  • 1 red onion, chopped
  • 1 stalk of lemongrass, thinly chopped
  • 2 bird eye chilli, thinly sliced (optional -for extra heat)
  • 1 tsp fresh calamansi juice
  • 2 tbsps WORLDFOODS Thai Yellow Curry Paste
  • Some cooking oil

    PREPARATION

  1. In a pestle, combine chopped red onion, lemongrass, bird eye chillies, squeeze in the calamansi juice.
  2. Start pounding it until it becomes a rough paste.
  3. Add WORLDFOODS Thai Yellow Curry Paste.
  4. Continue to pound until it becomes a thick paste.
  5. Coat the fish with the marinate paste and leave it for at least 30 minutes.
  6. Spoon few pieces of fish onto a piece of banana leaf, wrap and seal both ends with a toothpick.
  7. Heat up the pan griller. Brush with some oil and grill the fish packets for 3-4 minutes each side.
  8. Serve the fish hot.
