    INGREDIENTS

Dressing
  • 1 egg yolk
  • 1 tablespoon Dijon mustard
  • 200ml sunflower oil
  • 2 tablespoons WORLDFOODS Pina Colada
Toppings
  • 2 sprigs coriander leaves, roughly chopped
  • 2 sprigs mint leaves, roughly chopped
  • 1-2 green bird's eye chillies, chopped
  • Salt and pepper to taste
Salad
  • 1/2 cucumber, cored and julienned
  • 16 cherry tomatoes, halved
  • 6 shallots, thinly sliced
  • 2 tablespoons toasted cashew nuts
  • 16 medium prawns, shelled and cooked

    PREPARATION

  1. In a mixing bowl, whisk egg yolk and mustard.
  2. Add the oil in a slow stream while whisking.
  3. Add the rest of the dressing ingredients and mix well.
  4. Toss with the cucumber, cherry tomatoes and shallots.
  5. Scoop unto a plate or shot glass and top with prawns and cashew nuts.
