    INGREDIENTS

  • 8 large king prawns
  • 1 head Romaine lettuce, torn into bite-size pieces
  • 250g (8.9 oz) pomelo segments (alternatively, use grapefruit)
  • 2-3 tbsp roasted peanuts, chopped
  • 1 medium red chilli, thinly sliced
  • 2 kaffir lime leaves, thinly sliced
  • 1 tbsp ground dried shrimp (optional)

    PREPARATION

  1. Preheat grill and grill prawns in their shells until just cooked. Once cooled, peel and devein prawns.
  2. Arrange lettuce leaves on a place.
  3. Break pomelo segments into smaller pieces.
  4. Toss prawns, pomelo, chillies and kaffir lime with WORLDFOODS Thai Coconut and Lime Salad Dressing
  5. Just before serving, stir in ground shrimp into the salad. Turn out on to serving platter with lettuce and top with peanut
