    INGREDIENTS

  • 2 tablespoon WORLDFOODS THAI RED CURRY PASTE
  • 150g (5.3oz) okra, sliced diagonally
  • 100g (3.5oz) aubergine, cut into 2 inches long strips
  • 1 medium onion, sliced
  • 1 tablespoon tomato paste/puree
  • 100ml (3.3 fl.oz) water
  • 1 tablespoon oil

    PREPARATION

Medium heat
  1. Heat a large frying pan and pan-fry aubergine for 2-3 minutes until cooked. Remove onto a plate.
  2. Heat oil and brown onions. Add okra and stir-fry for 2 minutes.
  3. Add curry paste, tomato paste and water and cook till okra is tender.
  4. Just before serving, throw in aubergine and stir till heated through.
  5. Serve with rice or as a side dish.
