    INGREDIENTS

  • 2 fresh Italian sausages
  • 1/2 onion, chopped
  • 2 tomatoes, deseed and chopped
  • 1 can baked beans, washed and drained
  • 2 tsp WORLDFOODS Harissa paste
  • 2 cups chicken stock
  • 2 sprigs of thyme
  • Salt, pepper to taste
  • A handful of fresh coriander, chopped
  • Half lemon
  • Olive oil to sauté

    PREPARATION

  1. First open the sausage casing and ‘undressed’ the sausages.
  2. In a medium pot, heat up the olive oil, tear the sausages and drop them into the pot, brown the sausage all sides then dish it out.
  3. In the same pot, add a little more olive oil, sauté the onion until it’s translucent. Add the chopped tomato and harissa paste. Add back the sausages.
  4. Add the chicken stock then baked beans. Cook until it’s bubbling then turn to simmer. Add thyme.
  5. Add salt and pepper if needed.
  6. To finish off, squeeze in the lemon juice and garnish with the chopped coriander.
