    INGREDIENTS

  • 175g dried black beans soaked overnight (may opt for black bean in can)
  • 1 small red onion chopped
  • 225g grated cheese
  • 1 tbsp chopped fresh coriander
  • 8 flour tortillas
  • 1-2 tbsp WORLDFOODS Green Curry Paste

    PREPARATION

  1. Place the beans in a large pan. Bring to boil and simmer for 30 mins. Add the salt and continue simmering until tender. Drain and cool slightly.
  2. In a baking bowl, combine the beans, onions, half the cheese, jalapenos/zucchini, coriander and WORLDFOODS Thai Green Curry Paste.
  3. Place a tortilla on a clean wok. Spread a large spoonful of the filling down the middle, then roll up to close completely. Place the burrito in the prepared dish, seam side down. Repeat this process with the remaining tortillas.
  4. Sprinkle some cheese over the burrito down at the middle. Bake in the oven for 15 mins until cheese melted completely.
  5. Serve the burrito immediately.
