    INGREDIENTS

  • WORLDFOODS Thai Creamy Chilli Kaffir Lime Stir Fry Sauce
  • 150g (5.3oz) prawns, shelled and deveined
  • 50g (1.7oz) sweet potato, sliced into strips
  • 80g (2.8oz) beansprouts
  • 4 spring onions, chopped finely
  • 2 sprigs of coriander, chopped finely
  • 100g (3.5oz) plain flour
  • 100ml (3.3 fl.oz) water
  • 2 eggs
  • salt to taste
  • 1/2 teaspoon black pepper
  • Oil for deep frying

    PREPARATION

  1. Sieve flour into a mixing bowl. Add chopped coriander and spring onions, eggs, pepper and salt to taste. Stir in water to form a batter.
  2. Heat oil in a wok or frying pan.
  3. Pour 1 tablespoon of batter into a ladle. Swirl the batter around so that it completely covers the interior of the ladle.
  4. Add a few strips of sweet potato, beansprouts and a few prawns.
  5. Dip the ladle into the hot oil and leave until fritter is golden brown.
