  • 1 whole barramundi, approximately 800gram in size, scaled and gutted
  • 1-2 tablespoons of soya sauce
  • 1 tablespoons of fish sauce
  • 2 tablespoons of oyster sauce
  • 200ml of WORLDFOODS Hot Green Chili Sauce
  • 3-4 cloves of garlic, sliced into thin circles
  • 2 limes, sliced into thin circles
  • 5-6 kaffir lime leaves
  • 2 cayenne peppers, cut into shreds
  • ½ a handful of coriander leaves


  1. Score the fish on both sides with a sharp knife with slices about 3cm apart, creating deep ridges all the way to the spine
  2. Place fish on a plate on put it into a steamer for 18 minutes
  3. In a bowl, combine oyster sauce, fish sauce, soya sauce and WORLDFOODS Hot Green Chili Sauce
  4. After 18 minutes remove fish and pour the sauce onto the fish
  5. Add garlic slices and cayenne peppers
  6. Put fish back into steamer for 2 minutes
  7. Remove fish, garnish with kaffir lime leaves, cayenne peppers and coriander leaves before serving.
