  • 60g Thai Ginger Lemon Grass Stir fry Sauce
  • 60g milk
  • 30g olive oil
  • 2 eggs
  • 5g sugar
  • 5g salt
  • 150g flour, sifted with
  • 12g baking powder
  • 45g cashew nuts

    PREPARATION

  1. Preheat oven to 180°C.
  2. Mix together the sauce, milk, olive oil, eggs, sugar and salt. Using a spatula, fold in the flour and baking powder mixture until just incorporated; do not over mix.
  3. Pour the mixture into paper cup-lined moulds, topping each with a cashew nut.
  4. Bake for 20 to 25 minutes, or until a skewer inserted in the middle of the muffin comes out clean.
